Kevin Scharpf

Restaurant Management

Kevin Scharpf is a 2004 graduate of Galena High School, and attended the AVC Restaurant Management Program at the AVC from 2002 to 2004.  Kevin went on to attend Le Cordon Bleu at Brown University in Minneapolis, Minnesota from 2004 to 2006.

When asked how the AVC impacted his culinary schooling and career, Kevin talked about his first day at Le Cordon Bleu.  

"On the first day, we broke into groups of about 50 students to take a tour of the kitchens and classrooms.  When we got to the Stocks and Sauces kitchen, the chef instructor asked us as whether we knew the five Grand Sauces, which are the classical base for sauces in any kitchen.  Out of the 50 students I and one other student knew the answer.   For the first two months of school, I had the best knife skills out of the 50 in my group  My classes at the AVC had me truly pepared for culinary school"

Kevin went on to an internship at Restaurant Daniel in New York City for two months.  Kevin is currently working at a local restaurant.  He hopes to own his own restaurant in the future.
