Sweet Taste

Composing beautiful desserts can be difficult, but the outcome can be a fantasy dessert.  Restaurant Management students attended the Galena Art and Recreation Center's Annual Taste of Galena at Eagle Ridge Inn and Resort on February 3, 2012.  The Restaurant Management program has been a participant in Taste of Galena for 13 years and students have presented beautiful desserts as well as hors d'oeuvres, soups, and entrees.  

Students begin their journey toward Taste by looking at various recipes in the Professional Pastry Chef written by Bo Friberg, a master pastry chef.  Once students find the dessert they would like to recreate, the next step involves going over recipes.  There are many recipe components to the desserts.  For instance, Strawberries Romanoff includes recipes for: a chocolate goblet, orange custard, strawberry sauce and sour cream piping sauce as well as fresh sliced strawberries.

After preparing their grocery lists of the items, a few days before Taste, students can begin preparation.  In the case of the chocolate goblets, a couple of goblets will be made in case of breakage.  Chocolate discs which go into the tasting cups will be made as well because chocolate holds up very well.  The rest is made the day of to ensure freshness.  

Some of the various decorations that go along with the student's creations include chocolate butterflies, caramel decorations, plating techniques and special cookie batters and shapes. 

The journey to the complete dessert involves learning new techniques, problem solving skills and lots of creativity and the students rose to the occasion once again this year,.
