RESTAURANT MANAGEMENT ATTENDS TASTE OF GALENA

The students of the Restaurant Management Program will be attending their 10th Taste of Galena. Students have been participating since 1998, under the guidance of Mrs. Cathy Moon and Chef Ron Moon, of the Irish Cottage and Boutique Hotel. The Taste of Galena is sponsored as a fundraiser for the Galena Art and Recreation Center and is held in the ballroom at Eagle Ridge Inn and Resort February 8, 2008, from 7PM to 10PM.
Mrs. Moon prepares students who are in their first year of the program to create beautiful pastries using recipes from “The Professional Pastry Chef” written by Bo Friberg, Master Pastry Chef. Students will be presenting desserts such as Marjolaine, Coeur a la’ Crème with Pistachio Crust, and Cappuccino Mousse in a Chocolate Cup.
Students will prepare a main display of the dessert, which will be their presentation on the buffet. They will also prepare samples which the Taste attendees can purchase using a ticket system developed by the Galena ARC. Taste of Galena is also a competition for local restaurants, where the attendees vote on their favorite foods. The Restaurant Management students won second place the first year the competition was held, and third place last year.
Six students, some of whom are students in their second year of the program, and some who are seniors, will be working with Chef Ron Moon. Chef Ron and the students will be preparing and cooking Spanish Tapas and Paella. Chef Ron and Mrs. Moon will work with the students at the AVC to teach them about the food they are preparing, proper presentation for a buffet or catering event and how to transport and hold food at the event. Students also learn how to butler foods, which is the art of carrying the food around to the attendees and offering various items, cooking at the buffet site and overall customer service. Students also learn the satisfaction of a job well done, as customers are very complimentary, and are very interested in the various items the students have prepared.
